Process description
The first and most critical stage for malting is steeping. After cleaning and screening, barley is transferred to the malting system. The barley steeping is to increase grain moisture content to a target level suitable for enzymatic activation and germination initiation.
During steeping, barley is subjected to a series of controlled wet and dry cycleswithin a steeping vessel (steep tank). In the wet phases, the grain bed is fully immersed in process water under regulated temperature and aeration conditions to ensure uniform hydration and to prevent anaerobic stress. In the dry phases, also referred to as air rests, the steep water is drained and sterile or conditioned air is introduced to the grain bed to maintain oxygen availability, remove CO2 accumulation, and stabilize respiration activity.
The cyclic alternation between immersion and air rest is typically governed by an automated control system that regulates cycle duration, water level, temperature, and aeration rate. This ensures consistent moisture uptake across the grain batch and minimizes variability in germination performance. The steeping process continues until the barley reaches the required target moisture content, at which point it is discharged for the germination stage of malting.
Generally, the steeping time is approx. 48 hours. After steeping, the barley and water are transported together with a non-blocking pump to the germination process.
